Crepe Maker? No! Pancakes!


So my mum wanted crepes one day when she was up visiting, and so what my mother wants she finds a way to get. She bought this crepe maker from our grocery store. That night we made crepes....and by the way htey wernt too hard to do. We filled them with a creamy chickeny mushroom mix we made up and enjoyed ourselves. The next morning my mother was gone but the crepe maker was obviously going to clutter her kitchen up!! so she left it to clutter mine. Which i dont mind her doing because it actually makes very nicely golden browned Pancakes.

My own recipe
Mine that im going to share,


makes 6 so obviously i double it!!

1 1/12 cups self raising flour
1/2 tsp bicarb
1 tbs sugar
1 heaped tbs butter melted
1 cup of milk or butter milk'
(or i normally use 1/4 cup milk powder mixed into the dry ingredients and a cup of water)
1 egg

Mix all dry ingredients together, add the wet and mix. Now if you like thinner pancakes add more milk if you like them thick and fluffy add less liquid if you like them perfect follow my recipe!!.
I frequently add blueberries, bananas, rasberries to the batter mmmm choc chips!! I also let the batter sit and rest while the pan is heating up.

White Toblerone!!


Ok so at my sisters wedding she had her husband to be at the times sister in-law (stay with me : ) ) to cater. Well I was actually the one that was co-ordinating with her (the sister in-law) about things to free up Sherri (my sister). One of the things i told her was " YES we have white toblerone chocolate for your white toblerone choclate cheese cake that your going to make as the primary desert" UMMM no we don't . Was i the last person to know that we don't commonly sell white toblerone chocolate where i live!! Well anyway this past Fathers day as i was wondering aimlessly about the stores trying to find the perfect present for the perfect husband i came across this..... A 400gm block of white toblerone chocolate in my local Kmart for $5. It must be a special occasion kind of appearance. Well i didn't get my hubby a present as such, I made him the most delectable white toblerone chocolate cheese cake, from a recipe i found on the internet supposedly made by a man who owns a cafe and HIS white toblerone cheese cakes are famous. No pictures it didn't last too long sorry.

Chicken Enchiladas

Sauce:
1 1/2 cups chopped onion
2 cloves garlic minced
1 green capsicum chopped
3 tsp mexican chilli powder
2 420g cans chopped tomatoes
2 tsp sugar
1 tsp salt

Filling:
2 cups cooked chicken, chopped
3 tsp Mexican chili powder
500g shredded cheese
12 flour tortillas

Bring all sauce ingredients to a boil, then simmer for 30 mins. Put chicken and chili powder in a bowl and mix together. Spread a handful of chicken mixture, and cheese on each tortilla and roll up. Lay the enchiladas in a lightly greased pan. Cover them with sauce mixture, then sprinkle remaining cheese over the top. Top off with chopped spring onions. Bake in a 175 degree C oven for about one hour.

My husband is somewhat a Mexican food specialist!! considering he is half Mexican and from Arizona... Anyway for the first little while of our marriage he would make enchiladas from the old elpaso packets. And i really didn't like it Sorry dear, I kept telling him that i have a recipe (Aunty Jans) that is from scratch and is really nice. Now im not allowed to make anything else : )
And i think that should just about do it for cream for now...Well for that bottle any way!!!

Kellies Pasta

This is a take on my friends pasta. She showed it to us in one of our cooking groups. Even though i put in a few different ingredients its still Kellie's because essentially the sauce is the same. Oh and it has cream in it!!

Quiche

Quiche made with cream. I call them refrigerator quiches coz i just use what i have in the fridge!

3 eggs to 1/2 cup cream or there abouts and whatever filling you want. I normally use up the rest of my bacon, cheddar cheese, sometimes shallots, spring onions i also chuck in some garlic and onion powder salt and pepper. For the other one i treated us to some smoked salmon and fetta cheese yummmm.

Banana Cake


Warm Banana Cake with home made caramel sauce and a dollop of cream!!

Homemade Banana Cake

2 cups all purpose flour
1 1/2 cups sugar
1 1/2 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
1 cup mashed banans (3 medium size)
1/2 cup butter milk or sour milk (sometimes i just use milk)
1/2 cup shorting or butter
2 eggs
1 tsp vanilla

Grease and flour your pan, either 2 9inch round pans or as you can see i used a bunt tin. In a large mixing bowl combine flour, sugar, baking powder, baking soda, and salt. Add bananas milk, butter, eggs and vanilla. Beat with an electric mixer on low speed untill combined Beat on medium speed for 3 minutes. Pour into prepared pans, bake at 175 degrees C for 30 mins.

Brownies with Caramel Sauce and ??

Ok so i have a few brownie recipes, actually i have a few brownie recipes and all serve different purposes. Some you have to melt chocolate, some you have to cream butter and sugar, some are like a cake texture and only one of them is like this. My favorite recipe is one you can mix in one bowl. This brownie recipe has never let me down and i can serve it with anything. This time i made up a mix and poured some of my caramel sauce over the top. Actually it was the very last from the batch i made earlier this week. So yeah anyway i just poured it over and baked it.

And This is what happened Delish! Serve it with a BIG dollop of cream : )

Brownies

1/2 cup cocoa
1 cup veg oil (make sure you don't use Olive oil)
4 eggs
2 cups sugar
2 tsp vanilla
1 1/2 cups plain flour
1/4 tsp salt
1 cup milk choc bits

Mix cocoa and oil until smooth. In another bowl, beat eggs. Then add sugar, vanilla and cocoa mix. Mix well. Stir in flour and salt. Pour into lined 8" baking pan. Sprinkle choc chips on top Bake at 180`C for about 30 mins.

So i did say i like this recipe because it can be made in 1 bowl. Well even though i was nice and gave you the right way to make these. I use one bowl. Its cheeky but why bother making more work for yourself. And i omitted the choc bit in place of the caramel ENJOY!

Caramel Sauce

Home Made Caramel Sauce

So i thought i would share my Caramel Sauce recipe. No shop bought stuff in my house (including choc sauce and berry, fruit, i will share) and not in yours either after you've made this are you ready?

1 cup caster sugar
3/4 cup water
300mls cream : )

Melt sugar in the water in a saucepan on the stove over a low heat. Once melted turn up heat and boil till sugar starts to turn a golden brown. This can take anywhere from 8-10 mins be sure not to stir. Once sugar mixture is a golden brown take off heat and add cream. At this point it should all clump up and look freaky. Keep mixing, put back on a low heat and mix till smooth this should only take a minute. Serve warm over ice cream and refrigerate the rest, heat portions as you want it. Delish try it its yum!

Ashgrove in my IGA

Look what i found in my local IGA this week. Yes that's right its a 2 litre bottle of Ashgrove cream mmmm. (Ashgrove is a wonderful local cheese making factory found half way between my house and my mums its a local icon) And do you know how much i got it for?? Well lets start with how much it costs for a 600ml of Woolworths cream about 48c a 100ml, Pura about 51c a 100ml, Pura dbl thick $1.48 a 100ml, Betta cream which is what i always get its about 48c a 100ml also which isn't too bad for a local cream. This little beauty cost me $6.49, that's right a total bargain, i had to check the receipt to make sure. If your wondering that's a cool 32c a 100ml. Now what does Mel do with all that cream now she has it? Well ill tell you.......
