Choc Chip Muffins

When my baby girl was about 5 years old she asked if she could cook some muffins. I said yes but she had to wait till i could help her. Well as far as patients go in children she couldn't wait so i told her to go for it without me, i thought it would be good for her to experiment. And you know what she did! When 45 minutes later i was enjoying a nice tasting muffin i asked her what she did (i knew she couldn't read so she didn't use a recipe), she said she put some flour, milk, cocoa, sugar and butter and an egg in a bowl and mixed it and put it on the number i use 180`C ( I helped her put them in i am a responsible parent) on the oven. You know they were really good. So today she is the muffin queen we have although graduated to recipe following now that she can read. This recipe for choc chip muffins is good because i always have the ingredients for them around, she can even measure properly now.

Charnas Choc Chip Muffins

300g self raising flour
1tsp baking powder
50g butter
80g caster sugar (she often just grabs the normal granulated sugar)
150g milk or plain choc chips, Sometimes Charna just breaks up a block i may have around
2 eggs lightly beaten
225ml milk
1 tsp vanilla

Pre heat oven to 200`C Grease a 12 cup muffin tin
mix the flour, baking powder in a lg bowl, Rub in the butter until mixture resembles bread crumbs. Stir in the sugar and choc bits. In a separate bowl mix all other ingredients and then add to the flour mixture. Mix gently being careful not to over mix. Bake for 18-20 mins or until golden and firm to the touch.
