Gather your supplies a tin of tomatoes, a tin of baked beans, some pumpkin, an onion, carrot, potatoes, celery, garlic., Lentils or dry soup mix, chicken stock powder. Now really the rules for making this soup is simple use whatever veg you have in the fridge. I chose fresh tomatoes because their about to turn, carrots coz i only had two and they needed using, get the idea!
Dice everything up and choose your meat, this time i chose beef but the last time i chose chicken wings, let the meat fall off the bones and then pulled out the uneatable bits.Add as much chicken stock as your package tells you, me i just chuck in what i feel, add more later if you need don't put the pumpkin in yet, Toward the end you'll cook them up, (microwave or steam them), mash them and then add them.
Open your tins of beans and tomatoes and add those. Now use those tins and fill them with water a couple of time each it serves two purposes 1- less dishes to wash, 2- it cleans out the can for you, you paid for every bit of those tomatoes so use them why not!! add as much water as you like thin or thick soup its your choice. Now let it cook for an hour or so. I like to make sure the meat is tender.
Now add your mashed pumpkin, stir, serve and eat
Ok so my husband has recently been very sick, and this meant that he spent a week or so in a hospital just over 4 hours away from home. Until he had his operation i went down to Hobart ( where the hospital he was at is). I stayed at my uncle and aunties house down there, although they were not there, my aunties mother was, she was house sitting. I learnt a few trick from her (i called her nanna Marg) one of them was this soup. Now i have to say this for all who will listen. Listen to the older ladies who are willingly ready to share thier knowledge, this is where it all begins people, the tried true and tested stuff, Take my word, perfect their stuff and then add your own flare and people will talk about your food for long after youve washed the dishes (lol)
